Technol . 182 , 111719 (2021) Strawberry is one of the most popular fruit crops worldwide. The liking of strawberries is affected by the sweetness and flavour intensity. To extend the shelf life, harvesting strawberry fruits before they are fully ripe is a common practice. However, the volatile composition of strawberries can change during post-harvest storage. How the liking of strawberries is affected by their maturity at harvest and post-harvest storage conditions is not well understood. Hua Li from Wageningen University & Research, the Netherlands, and colleagues combined sensory profiling and gas chromatography-mass spectrometry (GC-MS) and proton transfer reaction time-of-flight mass spectrometry (PTR-ToF-MS) measurements to determine the sweetness and the volatile organic compounds of strawberries at different maturity stages and subsequent cold storage conditions. The team found that strawberries harvested at the three-quarter red stage showed lower sweetness and aroma compared with full-red-harvested strawberries, irrespective of the storage time. Some of the volatile organic compounds and fragments were associated with both sweet and aromatic strawberries, and it is possible to predict consumer liking from the volatile composition and abundance. Consumers’ preferences and liking are important for food production, transportation and marketing. For perishable fruits such as strawberries, enhancing consumer preferences and maintaining quality through various post-harvest handling techniques are critical. Li and colleagues assessed the effects of harvesting and storage conditions on consumer liking and proposed that it is possible to develop fast, non-destructive methods to select strawberries with high consumer preferences. Although the current approach needs to be scaled up in different cultivars and growing conditions, the authors demonstrate that robust methods are needed for better post-harvest solutions to handling fresh strawberries.
